After the 2019 vintage, we have again pressed a Grüner Veltliner Drei Rosen in 2021. A special wine that shows how multilayered and opulent Grüner Veltliner can be. With the Grüner Veltliner Drei Rosen, we have started a series of special fillings in 2019, which differ in style and presentation from our regular range. For the Drei Rosen (“Three Roses”, named after the old name of our former inn), we only harvest very ripe grapes from selected vines in exceptional vintages. The 2021 vintage – certainly one of the best in the last ten years – again proved ideal for the vinification of this special wine. The Drei Rosen is a wine for which we take a lot of time. This begins with the harvest, for which old vines are grown in our best vineyards at the very end of the harvest season. Again we worked with a longer maceration time before pressing, and this time we even let the maceration ferment for a few days. After pressing, fermentation continued first in steel tanks and then for a year in small, but this time used wooden barrels. The result: a Grüner Veltliner with depth, complex, juicy, with a long, mineral finish and long storage potential. As with the first edition of the Three Roses, we have also used an excerpt of a work by Salzburg artist Wilhelm Scheruebl for the label of the 2021 vintage. The strong colors of the watercolor, the complex structure and the harmonious overall impression, in our opinion, reflect the characteristics of the wine very well.
